These mini muffins literally have all the nutrition! I’ve been playing around with this recipe for years and this is one of my favorites. ❤️
As a busy mom, wife, trainer & coach I need to be prepared and plan ahead. When we plan ahead our meals & snacks we will be more successful at obtaining our goals.
When we think about what we’re putting into our body, how it’s fueling us & how good it makes us feel then we will want to keep providing our body with the “good stuff”.
These muffins are loaded with protein, healthy fats, fiber, & collagen 🙌🏻 They are dairy-free and can easily be made gluten-free with a few substitutions.

Quinoa is high in protein, fiber and vitamins, like potassium & iron. It contains more protein than any other grain & it’s gluten-free.

High in fiber, vitamins & minerals. They can help stabilize your blood sugar & help protect your heart. Great way to get magnesium, zinc, iron, & selenium. Help with weight management, as eating oats helps you feel fuller longer.

Collagen has SO many health benefits! Unflavored is the best as you can add it into coffee, recipes, teas with no added flavor. But for this recipe the vanilla adds that touch of flavor for our muffins.
Collagen can improve your skin, help relieve joint pain, provides structural support in your muscle & connective tissue and don’t even get me started on how great it is for your gut health! Collagen may also help with hair growth. Collagen literally holds your body together, keeping you looking and feeling young and vibrant!

Ancient Nutrition

This popular spice actually has many health benefits! Loaded with antioxidants, helps lower blood sugar, helps improve your digestion, and also help with indigestion, heart burn & nausea.

Almond milk is a great plant-based milk. Choose the unsweetened varieties and I personally prefer the vanilla flavor. It contains calcium & vitamin D! When possible try to choose organic 🌱


Coconut Oil is a great healthy fat 👍🏻 it has those healthy fatty acids which help burn fat, provide energy & reduce hunger. Coconut oil can raise good cholesterol (HDL). I opt for unrefined organic, which means it is minimally processed, it will have more flavor & be more nutritious.


All natural peanut butter= no added ingredients besides peanuts. No added sugars or oils. Yes you will need to stir it (the first time) Then store it upside down in fridge to prevent from having to stir every time.
Peanut butter is loaded with protein, healthy fats, & vitamins like- magnesium, zinc, B6, phosphorus & niacin.

Bananas are a great source of fiber, vitamins & minerals. You can get about 10% of your daily potassium needs from a banana. Bananas are a great natural source of energy.

This flour is actually very high in fiber & protein . It is gluten-free & has a good source of iron. Love using coconut flour as a substitute for other flours.

Blueberries contain many nutrients & antioxidants, plus they are high in fiber. The blueberries help add great flavor into these muffins!

Ingredients ⤵️
1/2 cup cooked and cooled quinoa
1/2 cup oats
2 scoops Vanilla Collagen Protein Powder
3 tsp cinnamon
1/2 cup unsweetened vanilla almond milk
1/4 cup unrefined coconut oil, melted
1/3 cup coconut flour
3 tbsp all-natural Peanut Butter
2 mashed bananas
1 1/2 cup frozen blueberries
Directions:
Preheat oven to 350^
Mix all ingredients together in a bowl
Spray mini muffin pan
Scoop batter into mini muffin pan
Bake for about 20 minutes
Store in fridge for best quality ✌🏼
